Accordingly, to make this salad, rambutan must be golden, just cooked, ensuring crispness, moderate sweet and sour. When rambutans are picked from the garden, it will be processed to take the white pulp inside, mixed with a little sugar and soaked in ice to keep it fresh and crispy. The chicken used in the salad is backyard chicken, ensuring the meat of toughness, aroma and sweetness. Mixed vegetables in the salad include shredded cucumber and shredded carrots, finely grated onion, shredded chili with basil, laksa leaves, fried onions and roasted peanuts. All ingredients are pre-processed and mixed with sweet and sour fish sauce. Chef Le Thanh Tai said: "To ensure the crispiness and taste of the delicious dish, we should mix ingredients for 5 minutes.
